Strawberry Pretzel Salad

This mouthwatering salad has a beautiful array of colors and textures including a welcome crunchy pretzel surprise for the palate.  Guests will think you toiled for hours but this recipe's elegance is in its simplicity. 

Ingredients

  • 4 cups cooked chicken, cubed
  • 2 cups fresh baby spinach
  • 1/2 cup purple cabbage, thinly sliced
  • 1 cup Uncle Jerry’s Pretzels, crushed
  • 1 summer squash, chopped
  • 1 zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 12 fresh strawberries, halved
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons poppy seeds
  • 2 teaspoons balsamic vinegar
  • 1 Tbsp. mustard
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon chili powder

Directions
1. In a large bowl, combine chicken with spinach, cabbage, pretzels,
squash, zucchini, tomatoes and strawberries; mix well to combine.
2. Pour remaining ingredients into a sealed jar; shake well. Drizzle
dressing over salad.
3. Serve chilled.
